I am cooking the roast with my Meater meat thermometer in a 250 degree oven until the internal temperature reaches 115 and then I remove the roast and increase the oven to 450 and then reinsert the roast until the internal temperature is 125 and then let it rest to an internal temperature of 135 before slicing.
