Demonstration of the fact that blown-out saturated reds are not happening in the sensor or RAW data. Left side is default Canon JPG render of a red flower; middle is the RAW data with interpolated RGB and no color balancing, still in linear format, where 0 corresponds to RAW 0, and 255 corresponds to RAW 4095 (nothing is even close to blowing out in the RAW data). Right side, RAW again, changed in "Levels" tool (upper hjhalf of RAW data clipped away, and gamma adjustment applied) to increase visibility of RAW detail. No sharpening at all applied to RAW data.
