You could get a nice blur background with your HS10 when (1) you move your HS10 as close as you can to the subject; (2) use the largest aperture (3) use the longest zoom

It is actually difficult to compare the two cameras since they are somehow targeted to two different market groups. If you take photos for product pictures and catalogues in most of the times, I would recommend S200 because its sensor is very good in managing low noise even at high ISO setting, in which I believe is the most useful feature for your usage.
