Like a shepherds pie, but with sausages!
Fry some good pork sausages until browned all over, then cut into chunks and place in a casserole dish.
Fry a chopped onion until softened, then add a Tbs plain flour and cook this for a minute or two, until well
incorporated. Season well with freshly-ground black pepper then gradually add some chicken stock and
a good tsp of Marmite (this gives the gravy a rich savoury flavour), stirring all the while, until you have
a nice thick gravy. Taste for seasoning – it should be salty enough from the stock and the Marmite –
then pour this over the sausages. Boil potatoes until soft, then mash with a good knob of butter and spoon
this over the sausages, forking the top to make ridges. Bake in a 180°C oven until bubbling at the edges
and the potato is browned and crispy. Serve with a green veg.
