~Vegan Banana Blueberry Candied Ginger Bread~
1 C organic sugar
1.5 tsp Ener-G Egg Replacer and 2 Tbsp warm water
1/2 C non-hydrogenated margerine
1 C ripe bananas
3 tablespoons soy milk
2 C unbleached flour
1 tsp baking powder
½ tsp baking soda
1 pint blueberries
½ C chopped pecans
½ C candied ginger
1. Preheat oven to 350 degrees F.
2. Cream sugar, egg replacer & margarine in a large mixing bowl.
3. In a separate bowl, mash bananas; mix with soy milk.
4. In another separate bowl, sift flour, baking powder and baking soda.
5. Stir dry ingredients, by hand, into reserved creamed mixture alternately with reserved banana mixture until flour is just moistened.
6. Stir in candied ginger, blueberries and nuts.
7. Turn batter into a 9x5x3 inch loaf pan and bake for 1 hour, or until toothpick inserted in center comes out clean, or use 3 6" mini loaf pans and bake for 35 minutes, or until toothpick inserted in the center comes out clean.
8. Remove from pan and cool on a wire rack.
