~Vegan Thumb Print Cookies~
1 c. almonds or pecans, coarsely ground
1 c. rolled oats, coarsely ground
1 c. whole wheat pastry flour
1/2 c. safflower oil
1/2 c. maple syrup or rice syrup
pinch of salt
water
fruit juice sweetened fruit spread
1. Preheat oven to 350 degrees F.
2. Process almonds and rolled oats in a food processor to a course grind.
3. Add rest of ingredients, adding enough water to make a moist dough.
4. Form walnut-sized balls and place on a silicon baking sheet.
5. Press your thumb gently in the center and fill with fruit spread.
6. Bake 15-20 minutes until golden brown.

Thanks soooo much for this recipe. Tried the recipe with barley flour, 3/4 almond 1/4 walnuts, canola oil, maple syrup & all the rest the same in the recipe. Makes a cookie even better than the one sold at Whole Foods in Seattle. Addictive!!!
